1 small white onion finely diced
100g plain flour
150g mushrooms finely sliced
Water or vegetable stock
Salt and pepper
Saute the onions in the butter until translucent then add mushrooms. Cook for 2 minutes then sprinkle in the flour. Cook until the mixture starts to come away from the sides of the pan. Add the cold water or stock until a thick soup is achieved. Use the milk to thin the soup to the consistency you require. Season then simmer. You can also add finely diced avocado or fresh herbs of your choice just before serving.
