500g kangaroo mince
1 small onion finely diced
1 small carrot finely diced
2 cloves garlic finely crushed
Salt and native pepper
3 desert tomatoes finely chopped
500 mls tomato juice


Mix mince, onion, carrot and tomato juice together in a thick bottomed pan. Place on a high heat and stir until boiling rapidly making sure no lumps form. Add the garlic, salt and pepper and simmer until the sauce is thick. Serve over pasta.

Pasta Dough
500g plain flour
3-4 eggs
1 tablespoon oil
1 teaspoon salt

Mix all ingredients then knead for 5 minutes. Lightly coat in oil and rest for 30 minutes. Roll as thinly as you can and cut into strips. Cook in rapidly boiling water for 2 minutes.
