4 Slices of bread (buttered)
Handful dried apricots
Handful choc chips
Handful slivered almonds
400mls cream
2 glugs (approx. 60mls) Brandy
2 eggs
Mint leaves

Layer buttered bread into bottom of small ECOPOT, finely chop dried apricots and sprinkle even amount of apricot, choc chips and almonds over bread, repeat layers. Mix cream, brandy and eggs, then pour over layered bread and add a few mint leaves to the top.

Place into the top of the large ECOPOT  5 min before simmer time has expired. Allow to cook for the duration of the cook time of the main meal.
